  • Ingredients

  • 1 tablespoon melted butter or coconut oil
  • 1/2 teaspoon vanilla extract

  • Directions

  • In a bowl, mix the flour, baking powder, and sugar. In another bowl, whisk together the eggs, milk, melted butter, and vanilla.
  • Mix the wet and dry ingredients until smooth.
  • Heat a nonstick skillet over medium heat. Use a spoon to scoop out the batter in small circles.
  • Cook each side for 1 to 2 minutes, until golden brown.
  • Arrange the pancakes on a plate and garnish with fruit and honey.
